How to Roast Spaghetti Squash

  • 1 spaghetti squash
  • 1 tbsp olive oil
  • 1/8 tsp salt, or to taste
  • 1/8 tsp pepper, or to taste


Preheat oven to 400ยบ F and line a baking sheet with parchment paper.

  • Rinse the squash and pat it dry. Cut off the top and bottom and place it on its end. Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.
  • Brush the insides with olive oil and sprinkle with salt and pepper.
  • Place them flat side down on the parchment paper lined baking sheet.
  • Bake in a preheated oven for 40-50 minutes, or until the inside of the spaghetti squash is lightly golden and tender.
  • Scrape each half with a fork to create strands. Serve with butter, and a sprinkling of salt and pepper, to taste.


Depending on the size, one spaghetti squash should yield approximately 2 1/2 - 3 cups.
