Fresh Peach Pie

Our Fresh Peach Pie is sweet and tart with a buttery crust and I love the bright orange and red colors of this yummy, fruity pie! It's so pretty and the strawberry gelatin thickens and sweetens the peaches beautifully, and adds so much flavor too.

Ingredients

Crust:

Filling:

  • 1/2 cup white sugar
  • 3/4 cup water
  • 3 tablespoons cornstarch
  • 3 tablespoons strawberry gelatin
  • 4 medium peaches, peeled and sliced (3 1/2 - 4 cups)
  • 1 tablespoon lemon juice

Sweetened whipped cream:

  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preheat oven to 400 degrees F.

    Crust:

    • Make a homemade flaky pie crust, or unroll a store-bought one and place it in a 9" pie pan. Cut off the excess dough, crimp the edges with a fork and prick the bottom and sides, to keep it from shrinking. Bake in a preheated oven 15-18 minutes, or until light golden brown. Set aside to cool.

    Filling:

    • Peel, pit and slice the peaches. Add the lemon juice and stir to coat.
    • Place the sugar, water, cornstarch, and gelatin in a saucepan over high heat. Stirring constantly with a whisk bring mixture to a boil and cook until thickened. Remove from heat and cool slightly.
    • Combine the slightly cooled gelatin mixture with the fresh peach slices. Cover and chill 30 minutes.
    • Stir gently then pour the chilled filling into the cooled crust. Chill the pie uncovered 30 minutes to set the filling.

    Sweetened whipped cream:

    • Place the heavy whipping cream, powdered sugar and vanilla extract in a large bowl. Beat on low speed until it's a little-thickened. Then beat on medium speed and then on high speed until very thick, but not solid. See the step by step process.
    • Slice the pie and top with a dollop of fresh sweetened whipped cream.
