Our Puff Pastry Apple Hand Pies are light, crispy and incredibly delicious. The apple pie filling is out of this world, and the puff pastry makes them extra good! These hand pies are a fun and easy way to serve up individual little apple pies.
We love apple recipes, and these hand pies are the perfect dessert for fall because of the warm flavors of apple, brown sugar and cinnamon!

Last week Florida was hit by Hurricane Irma and it was suppose to be catestrophic. But, we are so grateful for all your prayers and for God’s protection. We did have a lot of tornado warnings and one even touched down in our city, but no property damage, except for a few trees blown over.
Peel and dice the apples in small pieces, then toss them with the lemon juice. Over medium-high heat add them to a skillet, with the brown sugar, cinnamon, flour, butter and salt. Mix to coat and bring to a simmer, stirring occassionaly. Cook 5 minutes, or until the sauce is thick, and the apples are a little soft. Transfer filling to a bowl, cover and cool completely in fridge.
Go ahead and take a taste of these sticky, caramel apples – they’re oh so good! And, you might have a little filling left over, which goes great over vanilla ice cream, pancakes, waffles, or cheesecake. You’re welcome. 😉
Pro tip: Cooling the filling will help keep the pastry sheets chilled, so they’re a little easier to place on the baking sheet.
Wipe clean and generously flour a counter, and lay down one sheet of thawed but chilled puff pastry dough. Roll out into a square, then repeat with the other sheet.
Using a pizza cutter, cut both pastry sheets into 9 squares and cut out small stars in the center of one of the sheets. If your filling is a little runny, drain as much of the caramel sauce as possible and place a small scoop into the middle of each square. Put the other squares with the stars on top and seal the edges with a fork.
Brush pastries with the beaten egg and water and generously sprinkle with sugar. Take a thin metal spatula and slide the pastries onto a baking sheet lined with parchment paper.
Pro tip: Keep the counter dusted with flour while rolling, cutting and filling the squares. This will help them come off the counter easier.
Bake in a preheated 400º F oven for 20-25 minutes, or until puffed and golden brown.
Just look at those light and crispy pastries! The sticky juices that seep out a bit taste like the best apple fruit roll-ups. So, make sure to peel those off and eat them right up!
Cool on baking sheet, then dust generously with powdered sugar.

Puff Pastry Apple Hand Pies
Ingredients
- 4 cups (500 g) apples, peeled and diced
- 2 teaspoons (9.86 ml) lemon juice
- 3/4 cup (165 g) brown sugar, packed
- 1/2 teaspoon (2.46 ml) ground cinnamon
- 2 tablespoons (29.57 ml) unbleached or all-purpose flour
- 2 tablespoons (29.57 ml) butter
- 1/8 teaspoon (0.62 ml) salt
- 17.3 ounces (490.45 g) puff pastry, thawed at room temperature, but chilled (1 box)
- 3-4 tablespoons (44.36 ml) unbleached or all-purpose flour, for dusting the counter
- 1 (1 ) egg + 1 teaspoon water, beaten together
- 3 tablespoons (44.36 ml) sugar
- 3-4 tablespoons (44.36 ml) powdered sugar, for dusting the tops
Instructions
