Hey sweet readers, have you ever tried Meyer lemons? Well, we hadn’t, until we bought some to make this Meyer Lemon Poppy Seed Dressing. And let me tell you, Meyer lemons are delicious! They are a cross between a lemon and a mandarin orange, so they’re a little sweeter than regular lemons. They add the perfect tartness to this dressing, that is sweet and tangy, with the right amount of lemony goodness!
Our delicious Meyer Lemon Poppy Seed Dressing has a bright, fresh flavor and is great on salads.
The sugar in this recipe makes this dressing just a little sweet. And, you can easily adjust the sweetness to your liking by starting out with 1/3 cup and adding a tablespoon at a time, until you get the desired sweetness. But, I have to say, our family likes to use 1/2 cup sugar.
The outside color of Meyer lemons is the same as regular lemons. But, the inside color is a little darker and somewhat peachy, and they’re a bit sweeter too.
I recently bought a Chef’n Juicester Jr. 2-in-1 citrus juicer and I really love it. It comes with 2 tops; one for lemons (as shown) and a smaller one (in green) for limes. It strains out the seeds and holds the juice of approximately one lemon. I love good kitchen tools and recommending them to you whenever possible.
This recipe is super, duper easy, and no special equipment is needed. Just place all the ingredients in a container with a tightly fitted lid, make sure the lid is securely on and shake until the sugar is dissolved.
Chill in fridge for 1/2 hour and shake before serving. Yep, it’s that easy.
Get some fresh mixed salad greens, pickled beets and whatever toppings you love on salads, and top it with our yummy Meyer Lemon Poppy Seed Dressing. If you’ve never had a sweet and tangy dressing, you really should try this one, because it’s SO good!
Meyer Lemon Poppy Seed Dressing
- 1/2 cup white sugar
- 3/4 teaspoon salt
- 1 teaspoon dry ground mustard
- 1 tablespoon poppy seeds
- 3/4 cup Meyer lemon juice, or regular lemon juice
- 3/4 cup vegetable oil
- Place all the ingredients in a container with a tightly fitted lid. Once the lid is securely on, shake until the sugar is dissolved.
- Chill in the fridge for 1/2 hour and shake before serving.
