As you may know, I am part Hungarian and anyone that knows my Mom knows that she makes the BEST Hungarian Goulash! The funny thing is, is that my Dad’s Mother (where my Mom got all of her Hungarian recipes) never made Hungarian Goulash.
A little over 10 years ago My Mom & Dad traveled to Bratislava, Slovakia to visit my niece & her husband/their grandchildren, who were living there at the time as missionaries. My niece, Jamie had a Hungarian cookbook, where they found a recipe for Hungarian Goulash and my Mom added her own special touches to it. The rest is history and this Hungarian dish has been a family favorite for over 10 years now! Last week my sister, Sandy and her husband, David along with two of our cousins, Darryl and Michele, were in town, so my Mom made us Hungarian Goulash and Stuffed Cabbage, similar to our family’s Hungarian Stuffed Peppers.
This tasty dish has tender chunks of beef in a savory broth with csipetke (chip-ET-keh) noodles!
In a large pot heat the the olive oil over high heat, add the stewing beef and the chopped onions.
Cook until the liquids are evaporated and the beef is thoroughly browned.
Add the paprika, salt, pepper and 4 cups of water, cover and simmer for one hour.
Next, add the chopped carrots, parsley root, celery and potatoes and the additional 2 cups water, or enough water to cover the vegetables. Heat to a simmer. Cover and cook until the vegetables are tender, about one hour.
Taste the broth and add the beef broth paste and the additional 2 teaspoons sweet paprika, if necessary.
Make the homemade Csipetke noodle dough. Pinch off small pieces of dough and drop them into the boiling broth. Cover and simmer 15 minutes, or until tender, stirring occasionally.

- 2 pounds stewing beef, cubed
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 2 tablespoons sweet Hungarian paprika
- 2 teaspoons salt
- 1 teaspoon pepper
- 4 cups water
- 2 cups carrots, chopped
- 2 cups parsley root, chopped along with the greens
- 2 cups celery, chopped
- 8 medium red skin potatoes, quartered
- 2 cups additional water, or enough water to cover vegetables
- 2 tablespoons beef broth paste or bouillon, or to taste
- 2 teaspoons additional sweet paprika, or to taste
- 1 large egg, beaten
- 1/2 cup unbleached or all-purpose flour

- In a medium bowl whisk the egg, add the flour and knead it with your fingertips until a smooth firm ball forms, adding a little more flour if necessary. Cover with plastic wrap and let rest 30 minutes.
- Pinch off small pieces of dough and drop them into the boiling broth. Cover and simmer 15 minutes, or until tender, stirring occasionally.
