Our Puff Pastry Apple Hand Pies are light, crispy and incredibly delicious. The apple pie filling is out of this world, and the puff pastry makes them extra good! These hand pies are a fun and easy way to serve up individual little apple pies.

Ingredients
  • 4 cups apples, peeled and diced
  • 2 teaspoons lemon juice
  • 3/4 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons flour, unbleached or all-purpose
  • 2 tablespoons butter
  • 1/8 teaspoon salt
  • 1 (17.3 oz) box puff pastry (thawed at room temperature, but chilled)
  • 3-4 tablespoons flour, for dusting counter
  • 1 egg + 1 teaspoon water, beaten together
  • 3 tablespoons sugar
  • 3-4 tablespoons powdered sugar, for dusting the tops
Instructions
  1. Preheat oven to 400ยบ F and line a large baking sheet with parchment paper.
  2. Peel and dice the apples in small pieces, then toss them with the lemon juice. Over medium-high heat add them to a skillet, with the brown sugar, cinnamon, flour, butter and salt. Mix to coat and bring to a simmer, stirring occassionaly. Cook 5 minutes, or until the sauce is thick and the apples are a little soft. Transfer mixture to a bowl, cover and cool completely in fridge.
  3. Wipe clean and generously flour a counter, and lay down one sheet of thawed but chilled puff pastry dough. Roll out into a square, then repeat with the other sheet.
  4. Using a pizza cutter, cut both pastry sheets into 9 squares and cut out small stars on the one sheet. If your filling is a little runny, drain as much of the caramel sauce as possible and place a small scoop into the middle of each square. Put the other squares with the stars on top and seal the edges with a fork.
  5. Brush pastries with the beaten egg and water and sprinkle with sugar. Take a thin metal spatula and slide the pastries off the counter onto a baking sheet lined with parchment paper.
  6. Bake in a preheated oven for 20-25 minutes, or until puffed and golden brown.
  7. Cool on baking sheet, then dust generously with powdered sugar.
Notes
Thaw the frozen puff pastry sheets at room temperature for 40 minutes, but keep them chilled.

Cooling the filling will help keep the pastry sheets chilled, so they're a little easier to place on the baking sheet.

Keep the counter dusted with flour while rolling, cutting and filling the squares. This will help them come off the counter easier.
