I’ll show you how to make a juicy, tender pork roast by following these easy steps.
Here’s the pork roast with the roasted potatoes and carrots on a serving platter. The great thing about this roast is that it makes great sandwiches the next day.
If you’re watching your fat and calorie intake, but looking to add more protein to your diet, a pork loin roast is a really good choice!

Preheat oven to 325 degrees F.
- Rinse the pork roast and pat dry with a paper towel. Put the pork roast fat-side up in a roasting pan and sprinkle with the salt and pepper. Make small slits and press the garlic cloves in.
Pro Tip:
- This will ensure the garlic flavor is permeated throughout the pork roast.
- There’s no need to add water or cover the roast. Just place the pork roast in the preheated oven and bake for one hour per pound.
- The last 1 – 1 1/2 hours of cooking toss the quartered potatoes and baby carrots with the olive oil and place them in the pot. Cover and cook for an additional 1 – 1 1/2 hours.
Pro Tips:
- When done, the pork roast will be golden brown and there will be a broth in the bottom of the pan to make the gravy.
- Use the USDA Minimum Internal Temperature Chart for cooking meat.
- Allow the roast to rest for 5-10 minutes before slicing.
Gravy:
- Remove the pork roast, potatoes and baby carrots from the roasting pan and add 1 cup water to the pan. Place the pan over high heat and bring to a boil.
- Put the flour and additional 1/2 cup water in a small container and shake to mix well. Using a whisk, stir the flour-water mixture into the boiling pork broth and cook, stirring constantly, until the gravy is thickened. Remove from heat and add salt and pepper to taste.

Delicious Pork Roast Dinner
Ingredients
- 4-5 lbs (1.81 kg) pork loin roast
- 5 (5 ) cloves garlic
- 1 tsp (4.93 ml) salt, or to taste
- 1 tsp (4.93 ml) pepper, or to taste
- 5 (5 ) small potatoes, cut in quarters
- 1/2 lb (226.8 g) baby carrots
- 1 tbsp (14.79 ml) olive oil
Gravy:
- 1-2 cups (250 g) water (start with 1 cup)
- 1/4 cup (31.25 g) unbleached or all-purpose flour
- 1/2 cup (125 g) additional water
- salt to taste

- If the gravy is too thick with the first cup of water, add a little more water until desired thickness.

And now my husband’s comment about how his mother always does a roast in (what I call) a pot and puts it in the oven makes sense… Seeing as how I have some pot roast in the freezer, this may be added to next week’s menu.
