January is a great month to get back on track with some healthy and delicious recipes and this white chicken chili is so easy to make. Just put all the ingredients in a slow cooker, give it a stir and 3 hours later you’ve got a healthy meal.
I promise dinner doesn’t get much easier than this delicious chunky chicken chili! I saved a few slices of chicken to garnish our chili with, it looks pretty and adds a little extra protein.
In a hurry, or don’t have a slow cooker? No problem, you can make this recipe on the stovetop in about 35-40 minutes, including the prep. Just see the recipe notes below.

- To a slow cooker add all the ingredients.
- Stir to combine, put the lid on and cook on high for 3 hours.
- Before serving stir, scoop into bowls and add toppings of choice.

- 31 oz (2 cans) Bush's White Chili Beans in mild chili sauce, undrained
- 10 oz (1 can) mild diced tomatoes with green chiles, undrained
- 14 oz (1 can) reduced-sodium chicken broth
- 10.5 oz (1 can) low-fat cream of chicken soup
- 15.25 oz (1 can) whole kernel sweet corn, drained
- 1 medium Jalapeño, seeded and finely diced
- 3 1/2 cups (3 lb) rotisserie chicken, cut off bones and cubed
To a slow cooker add all the ingredients.
Stir to combine, put the lid on and cook on high for 3 hours.
Before serving stir, scoop into bowls and add toppings of choice.
For stovetop: Add all ingredients to a pot or skillet, stir and bring to a boil. Reduce heat and simmer 10-15 minutes, stirring occasionally.
Suggested toppings: Chicken slices, shredded cheddar cheese, light sour cream, and Jalapeño slices.
