These cookies are buttery, with a little texture from the glistening sugar, making these lovely hearts just so good!
So, let’s get baking!
Preheat oven to 360º F.
- In a large mixing bowl cream, 1 cup softened butter, 1 1/2 cups granulated (white) sugar, and 1/2 teaspoon salt. Mix on low speed for one minute, then medium speed for an additional minute.
- Add 2 large eggs and 1 teaspoon vanilla extract. Mix on low speed until the eggs are blended in, then mix on medium speed for a minute and then on high speed for an additional minute. The mixture should be pale yellow and very fluffy.
- Add 1 cup flour, along with 1 teaspoon baking powder and 1 teaspoon baking soda and mix on low speed. This will ensure the small ingredients are incorporated well and eliminate sifting. Continuing on low, slowly add the remaining 2 1/2 cups of flour and mix until the flour just disappears.
- Separate the dough, add a few drops of red food coloring to one bowl and mix well, leave the other dough white.
- Using a small (1 oz) cookie scooper, make balls of each color. Place the dough balls on a clean and floured counter in a checkerboard pattern.
- Put a piece of wax paper over the dough balls and flatten evenly with a rolling pin until the dough is about 1/4″ thick.
- Flour a heart-shaped cookie cutter and press into the dough, getting the hearts as close as possible, to make as many hearts as you can.
- Sprinkle the pink parts with pink sanding sugar.
- Take a floured spatula and slide the hearts onto an ungreased non-stick baking sheet about 1 1/2″ apart.
Pro Tip: If your kitchen is warm, wrap the doughs separately in plastic wrap and chill for 30-60 minutes before making the balls and rolling out the dough.
- Bake in a preheated 360º F oven for 10-12 minutes, or until puffy and evenly baked.
- Take the leftover dough and press it together to make a marbled effect. Roll the dough out as before, flour a cookie cutter and place the marbled hearts on an ungreased non-stick baking sheet.
- Then use a small (1 oz) cookie scooper to make small balls with the remaining dough, generously dust some with pink sanding sugar and place them on an ungreased baking sheet.
- Bake in a preheated 360º F oven for 10-12 minutes, or until puffy and evenly baked.
