This one pot Hearty Hamburger Stew has tender rice, lots of tasty vegetables, in a rich and savory broth, for a healthy, satisfying meal in one bowl! If you’re looking for great comfort food – this stew is it. It’s warm with rich flavors, and has the added benefit of being a healthier meal because it’s low in fat and high in fiber too!
Our sister-in-law, Judy made this meal for us recently, when my Mom was going through her struggle with cancer. My Mom’s sickness and passing were very difficult for all of us. But, sitting down to dinner as a family, to this amazing pot of hearty hamburger stew, was definitely a really nice memory.
My Mom loved a delicious meal and she would give this recipe a BIG thumbs up! She was an excellent cook and baker and was one of my biggest contributors. So, she’ll be missed for sure. But, I’m so glad we have many, many of her family favorite recipes here on My Sweet Mission. And, we have access to her handwritten cookbooks, so her recipes will continue to be shared and live on for generations. All this hearty hamburger stew needs is a slice or two of some tasty bread, and you’ve got yourself a perfect meal!
Judy says she has made this stew with a variety of different vegetables, and with quinoa or diced potatoes, instead of the rice. So, feel free to experiment with whatever you like. We thought the combination of onions, celery, carrots, green beans, corn, and rice would be outstanding, and it sure was!
So, let’s get cooking!
First, in a large skillet or pot, cook and brown the hamburger, with the salt and pepper, over high heat.
We like to use lean ground beef 90/10. If using a higher fat hamburger, brown beef thoroughly and drain it before adding the vegetables.
Reduce heat to medium, add the onions, celery, carrots and a 1/2 cup water. Cover and cook, stirring occasionally for 10 minutes. Remove the lid, add the minced garlic and cook an additional minute.
You can see a bowl of uncooked rice in the picture above. I prepped my rice, before adding it to the stew, to reduce the arsenic levels. Because unfortunately arsenic is found in rice. But, it’s easy to reduce arsenic levels with a few simple steps.
Next, add the remaining ingredients and bring it to a simmer over high heat.
Look how rich the color of this stew is, that would be from the V8 juice and vegetables!
Reduce the heat but keep it simmering. Cover and cook 15 minutes, or until the rice is tender and the stew is the desired consistency, stirring occasionally.
This hearty hamburger stew is rich and thick, and oh so delicious!
Okay, get your bowls, scoop it up and sprinkle with a little dried parsley. We just had the last bit of this awesome stew tonight for dinner, and it was just as good as the first bowl!

- 1 pound hamburger, lean ground beef
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup onion, chopped
- 1 cup celery, chopped
- 1 cup carrots, sliced
- 1/2 cup water
- 2 cloves garlic, minced
- 46 ounces (1 can) original V8 juice
- 14.5 ounces (1 can) diced tomatoes with green peppers & onions
- 14.5 ounces (1 can) green beans, drained
- 15.25 ounces (1 can) whole kernel corn, drained
- 1 teaspoon dried oregano
- 2 teaspoons dried parsley, separated
- 2/3 cup uncooked rice

You can also use quinoa or diced potatoes, instead of rice.
To reheat the leftovers; add 1-2 tablespoons of water to each serving, because the stew will thicken when cooled.
