I’ll be bringing you lots of delicious homemade cakes, but if you’re in a hurry it’s always great to have a boxed cake mix on hand. Today I’m sharing two awesome baking tips that I’ve been using for many years. One tip is for perfectly moist and lower calorie cakes using boxed cake mixes and light mayonnaise, and the other tip is for testing your cakes, where a toothpick comes out a little sticky and not perfectly clean.
Tip #1 – Light Mayonnaise verses Oil, Butter or Margarine
Breaking down the math:
- For the light mayonnaise: 35 calories x 9 tablespoons = 315 calories.
- For the oil, butter or margarine: 120 calories x 8 tablespoons = 960 calories.
So, using light mayonnaise instead of oil, butter or margarine saves a little over 600 calories per cake! Tip: Always check your cakes about 5-10 minutes before the recommended time on the box, because when using light mayonnaise your cakes will bake up faster. I promise your cakes will be super moist, as long as you don’t over bake them, which is my next helpful tip!
Tip #2 – Toothpick Tip and Testing Cakes
Everyone knows to test cakes with a toothpick, and it’s been said, if it comes out clean it’s done. Well, I’m here to tell you that if the toothpick comes out clean, most cakes will be over baked and dry. So, I say when testing a cake take a toothpick, insert it in the middle of the cake but, bake it just until the toothpick comes out a little sticky. Like in the image above, there should be small cake particles on your toothpick. Now, the toothpick should not be wet or completely dry, but just a little sticky. Testing your cakes this way will ensure they come out moist and delicious every time! You can also use this toothpick tip on muffins, quick bread & brownies.
